Method

    Preheat the oven to 350Β°F/180Β°C/Gas Mark 4.

    Prepare the tin by applying a thin layer of margarine and lining with two layers of greaseproof paper.

    Put the margarine, sugar, fruit, water, and mixed spice in a saucepan over a moderate heat.

    Bring to boil and simmer for 1 minute.

    Pour into a mixing bowl and allow to cool.

    Add eggs, flour and salt to cooled mixture.

    Mix well and pour into prepared tin.

    Bake for about one and a quarter hours.

    You may need to put brown paper over the top if cake starts to singe before it is cooked throughout.

    Cake is ready when an inserted skewer comes out clean.

    Leave to cool on a wire rack.

I made 4, 8" square tins of these cakes. I found them really easy and very nice. Me, my wife & my daughter loved them. I made 4 for my wife's 50th birthday for 100 people and I am sure that they will love them as I am going to put a bottle of napoleon brandy in them ( hic ! )

A lovely cake but I could have done with knowing the correct size of cake tin prior to baking. It came out lovely but if it had been in a smaller tin it would have looked more like the picture instead of the shallow cake which it was. It was a very tasty cake though and I will bake it again.Thank you for the recipe! :)
