- 1 papaya
- 1 punnet of strawberries
- 1tbsp lemon juice
- 2tsp honey
- 2tbsp sunflower oil
- 1tbsp chopped fresh mint

1. Peel and slice the mango, papaya and strawberries, and arrange in a bowl.
2. Whisk together the lemon juice and honey. When emulsified, whisk in the sunflower oil. Stir in the fresh mint and pour over the fruit.
3. Serve on its own as light and delicious summer starter.
