Halloumi is a lovely cheese made from a mixture of sheep and goats milk. It is quite a heavy cheese, usually white or a light yellow in colour and has a Ò€œrubberyÒ€ texture. This cheese does not melt easily therefore it is perfect for barbecues, grilling in the oven or for frying. This is a popular cheese all over the Middle East and is said to have originated in Cyprus.
