Shop-bought marmalade is ok, but it's nothing like home-made

1. Halve fruit, squeeze juice and save pips
2. Put fruit in blender and chop until almost a pulp (a little less if you like your marmalade chunky)
3. Put juice, fruit and water into a large saucepan. Put pips in a muslin bag or a steel rice ball into the saucepan.
4. Bring to the boil and simmer for an hour.
5. Let the liquid cool a little and add the sugar. Bring slowly t o the boil, making sure the sugar is properly dissolved. Boil rapidly for 20 minutes stirring from time to time.
6. Warm 6 large jars in an oven
7. Test for setting by dropping some of the liquid on a cold saucer - it should wrikle and form a skin.
8. Pour the marmalade into the jars, and allow to set.
