Method

    Wash oranges and cut in half, scoop out the insides (pips,flesh and pith) and put in a square of muslin.
    Slice the peel as thin or thick as you like.
    Put peel in a large pan with water. Tie up muslin and squeeze into pan then drop it in as well.
    Simmer for about 2 hours(no lid) till peel soft and liquid reduced to half.
    Remove bag, add sugar, mix then heat gently to dissolve sugar stirring often.
    Boil rapidly for about 15 mins till set reached by testing.
    Cool and remove scum, settle for 20 minutes, stir.
    Pot into hot,sterilised jars and cover.
