Ingredients
- 4 tbsp. Marmalade - use good quality for the best taste
- 1 tbsp. Ginger. finely chopped
- 3 Garlic cloves. finely chopped
- 3 tsp. Dijon mustard
- 1 tsp. Course sea salt with some pepper
- 50 ml Orange juice
- 1 tbsp. Olive oil
- 8 Chicken pieces. legs or thighs
- 4 Spring Onions

Description
One of my favourite dishes. Try using marmalade made with oranges with some lemon if you can find it. A strong bitter marmalade complements the tangy taste of the orange juice.

Heat the oven to 180C/Gas 4.
In a bowl, combine the marmalade, mustard, ginger, garlic, salt, pepper, orange juice and the oil. Mix well.
Add the chicken pieces and coat well.
Line a baking tray with kitchen foil and tip over the chicken and its marinade. Cover and leave for 20 minutes.
Put the chicken still covered into the oven and bake for 30 minutes.
Remove the cover, spoon the marinade juices over the chicken and bake uncovered for 15-20 minutes until the chicken is nicely browned.
Add the chopped spring onions near the end of the cooking time and season well.
Chef's Tips
Serve with a salad or mashed potatoes.
