Ingredients
- 4 Hake Steaks
- To taste Salt and pepper
- A little flour for dusting
- 1 to 2 Tblsp vegetable oil
- 1 Onion
- 1 Tsp Freshly chopped ginger
- 1 stem Lemon grass finely chopped
- 1 to 2 Tsp red or green Thai curry paste
- 1 Dried Asian lime leaf crumbled (optional)
- 2 Tsp Palm sugar or brown sugar
- 2 Cloves Crushed garlic
- 2 tsp Fish sauce
- 1 Can Coconut milk
- To Taste Fresh Coriander
- 12 Leaves Fresh basil (shredded)
- 1 Fresh lime juice

1. Season the Hake steaks with salt and pepper, and dust with a little flour.
2. Heat the oil in a sauce pan and fry the steaks very gently on each side, do not cook through, remove from the pan and set aside.
3. Make the sauce in the same saucepan, add a little more oil if need be, add the onions and ginger, lemon grass, curry paste, lime leaves and palm sugar.
4. Cook this whilst stirring, until onions are half cooked.
5. Now, add the coconut milk and cook for 10 minutes.
6. Then stir in the coriander, basil and fish sauce and lime juice.
7. Add the fish and let it warm through.
8. Serve with sticky rice

TIP: If you like spicy add more Thai Curry Paste
