Ingredients
- 250g Self Raising Flour (wholemeal if preferred)
- 2 teaspoons Baking Powder
- Β½ teaspoon Bicarbonate of Soda
- 50g dark brown sugar
- 1 teaspoon mixed spice
- 200ml buttermilk
- 2 eggs
- 3 tablespoons Honey
- 80g Butter (melted)
- 2 bananas (Chopped for mashed)
- sprinkle lemon juice
- 1 12 hole muffin tin lined with muffin cases

Set oven to 200 degrees
Chop or mash the bananas and spinkle with lemon juice β put to one side until needed
In a large bowl mix flour, sugar, baking powder, bicarb and mixed spice
In a jug beat the eggs, buttermilk, honey and melted butter really well
Quickly stir the egg mixture into the flour mixture (use a spatula and donβt overmix as this will stop the muffins rising β donβt worry if the mixture looks a little lumpy and you can still see a little dry flour.)
Fold in the bananas making sure they are well distributed throughout the mixture
Spoon into muffin cases and bake for around 20 minutes until well risen and golden brown
