Ingredients
- 500g Minced pork
- 0.5 Zest of Β½ a lemon skin
- 75g Breadcrumbs
- 75g Cooked chestnuts
- 0.5 tsp Sage
- good pinch Cumin - ground
- 1 Egg
- 1 Stock (from a stock cube)
- 1 medium Onion
- 1 clove Garlic

Smash up chestnuts on chopping board (or use a blender).

Chop onion really finely and garlic even more so.

Combine all ingredients in a bowl and knead thoroughly by hand. You may need to add a little water or milk to help the process. You could also use liquid stock instead of a cube to help this process.

Rest the mix for 15 minutes then form into 16 to 20 balls.

Place on a baking tray and grill on alternate sides until just starting to brown.

Add to sauce of your choice and simmer for 20+ minutes.
Chef's Tips
Flatten the meatballs a bit when you form them. It stops the rolling around when you turn them over for grilling.
Don't worry if you're out of chestnuts - they're not essential, just add a bit more interest.
Avoid using sausage meat if you can. It's a bit too fatty.
The meatballs go really well with a peppery creamy sauce made by Sch... (you know who!)which you can buy ready made to save time. Needs thinning down a bit though.
Ribbon noodles are a good accompaniment to this dish as is cranberry sauce.
