- 6oz Self Raising Flour
- 4oz Caster Sugar
- 1 Egg
- 1 level teasp Baking Powder
- 2oz Soft Butter
- 6 Tablesp Milk
- For the topping
- 1 lb (or more) Peeled quartered &, sliced apples
- 1oz Butter
- 2Β½ oz Soft Brown Sugar
- 1Β½ oz Flour (any kind)

This is a crunchy cake which can be frozen
Method

Put all cake ingredients into a bowl and beat till smooth.
Turn into a greased 8" tin (with a loose bottom) and smooth level.
Arrange apple slices in overlapping concentric circles on top of the raw cake.
Rub all the topping ingredients together until crumbly and scatter evenly over the ake.
Bake in a moderate oven (gas 5, 375F 180C)for 45 minutes when crumble is a rich brown and top of cake is firm to the touch.
Chef's Tips
This cake can be frozen. Remove from freezer several hours before you intend to use it and make sure it has defrosted all the way through before serving.
