Ingredients
- 1 lobster. cooked
- Squirt light cooking spray
- 1 shallot. finely chopped
- 250ml fresh fish stock
- 50ml white wine
- 1tbsp crème fraiche
- ΒΌtsp english mustard powder
- 1tbsp chopped parsley
- Β½ lemon juice
- salt and pepper
- 20g freshly grated parmesan
- Small handful fresh breadcrumbs

It's so amazingly decadent yet fabulously slimming, feels naughty but it's really good for you. My mum nearly cried when I presented it to her so I'd like to dedicate it to her x

1. Cut the lobster in half and remove the meat from the claws and tail. Leave to one side. Remove any meat from the head and set aside. Cut the meat up into pieces and place back into the shell.
2. For the sauce, fry the shallots with light spray and some salt and cook until softened. Add the stock, wine and crème fraiche and bring to the boil. Reduce by half. Add the mustard, herbs, lemon juice and seasoning.
3. Pre-heat the grill and spoon the sauce over the lobster meat. Sprinkle with the grated parmesan cheese and breadcrumbs. Place the lobster halves under a pre-heated grill for 3-4 minutes until golden brown.
Chef's Tips
Lobsters in Lidl can often be found frozen, pre-cooked for Β£5 each - perfect for a special occasion. If you get them from a fishmonger ask nicely and they might do all the prep for you.
