A delightful fresh summer salad, perfect served as a starter or a light lunch.

1. Blanch the beans in boiling water for 3 minutes until just cooked. Drain and set aside.
2. Crush the garlic to a paste and finely chop the mint. Place both in a bowl and mix with the olive oil and lemon juice, season to taste.
3. Add the green beans and toss in the dressing, add the sliced mozzarella and pine kernels and toss lightly.
4. Arrange in the center of a plate and serve with crusty bread.
