Description

A tropical teatime treat made with bananas, coconut and the natural sweetness of Alpro Hazelnut drink. Grass skirts optional!

Method

    Pre-heat oven to in 180ΒΊC/355ΒΊF/Gas Mark 4. Line the base of a 20cm x 5cm loaf tin with greaseproof paper and grease the sides well.

    Sift the flour, salt and bicarbonate of soda into a large mixing bowl then mix in the desiccated coconut. In a separate bowl, cream together the butter and sugar until light and fluffy. Mix in the mashed bananas, eggs and Alpro Hazelnut drink until smooth.

    Fold the flour mixture into the egg mixture. Pour into the tin and bake in a preheated oven until well risen and cooked through. This should take between 40 and 55 minutes, you can test by inserting a skewer – if it comes out clean, the cake is ready.

    Leave in the tin for 15 minutes before turning out on to a cooling rack.

For an extra special finishing touch, top with coconut icing.
