Description

An easy-to-make cake which can be varied by adding fresh plums or pears.

Method

    Turn oven to 325 F, 170 C or Gas mark 3
    Grease a 23 cm or 9 inch springform (preferably)cake tin.
    Place chopped fruit into bowl and cover with 2 extra tablespoons sugar and vanilla. Mix to combine.
    Gently melt butter. Cool slightly.
    Add sugar, beaten eggs and mix.
    Stir in sifted flour and baking powder.
    Place half mixture into cake tin.
    Layer with apples or fruit of choice and cover with remaining cake mix.
    Bake for approximately 45 to 50 minutes.
    When cool, dust with icing sugar and serve.
    Keeps well and retains moisture.

A tasty recipe and ideal way to use up 'old' apples (i used a variety that were in my fruit bowl ! ) Just a hint for future cooks... make sure you use a deep cake tin as i ended up with lots in the bottom of my oven lol !!It didn't impare the finished result though and everyone thought it was very tasty .. thanks for sharing the recipe x
