- 280g plain flour sifted
- 1tbsp baking powder
- 1/8 tsp salt
- 115g caster sugar
- 2 medium eggs
- 250ml milk
- 6 tbsp sunflower oil
- 85g butter, softened
- 175g icing sugar

This bunch of cupcakes looks like a bouquet of flowers. Created it first time a my best friend birthday as I want something different for her special day

Preheat the oven to 200C or 180C. Line a 12-cup muffin tin with 12 paper cases.
Sift together the flour, baking powder and salt into a large bowl. Stir in the caster sugar.
Lightly beat the eggs in a large jug or bowl then beat in the milk and oil. Make a well in the centre of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined, do not over-mix.
Spoon the mixture into the prepared muffin tin. Bake in the preheated oven for over 20 minutes until well risen, golden brown and firm to touch.
Leave the muffins in the tin for 5 minutes then transfer to a wire rack and leave to cool.
To make icing: put the butter in a large bowl and beat until fluffy. Sift in the icing sugar and beat together until smooth and creamy.
Put the icing into a piping bag using a Wilton 1M or 2D nozzle. Pipe the flower onto the cool muffin. Decorate with butterfly rice paper
To make the bouquet: cut oasis to fit into a pot. Cover the oasis with a white tissue paper. Put 2 cocktail sticks under the muffin and secure it onto the oasis. Complete to decorate the flower pot. Once completed, cover the flower pot with a coloured tissue paper and finish it with a ribbon. Finally decorate with fresh plants from the garden.
