Saute the onion in some oil, add garlic and herbs and stir for a few seconds. Add tomatoes, bring to the boil and then leave to simmer and reduce.
Make mozarella sandwiches, pressing down so they are quite firm.
Remove crusts.
Heat oil in a large frying pan, then fry the sandwiches until they are golden brown on each side.
Serve with the sauce.
