This hearty twist on the classic British bread and butter pudding combines the richness of creamy cheese and the earthy flavor of sautéed mushrooms. Perfect for a cozy dinner, it's an unexpected delight that showcases comfort food at its finest, inviting warmth and satisfaction with every bite.

Preheat the oven to 180°C (350°F).

Butter one side of each slice of bread and cut them into triangles.

In a skillet, melt 1 tbsp of butter over medium heat and sauté the mushrooms until golden brown and soft, about 5-7 minutes.

Arrange half of the bread triangles in a greased baking dish, buttered side up.

Sprinkle half of the sautéed mushrooms and half of the grated cheese over the bread.

Repeat the layers with the remaining bread, mushrooms, and cheese.

In a bowl, whisk together the eggs, milk, cream, mustard, salt, and pepper until well combined.

Pour the egg mixture evenly over the layered bread and let it soak for 10 minutes.

Sprinkle the top with a bit more cheese and bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the custard is set.
