Peel and chop 3 cloves of garlic and fry with the sliced onions in the oil. Add paprika, seasoning and when golden/orange add the oxo. Add tins of tomatoes, purรฉe, 3 whole garlic cloves, water and rice.
Place in a high-sided roasting tin and then place the chicken pieces on top and cover in salt & pepper. Roast for an hour checking water levels regularly.
Chef's Tips
If rice starts to crisp before chicken's going golden then add an extra bit of water. Don't add too much or the rice'll go soggy.

Looks fantastic and can't believe how simple it is. Will definitely give it a try and put my own spin on it. Thanks for the idea.
Tried this tonight ; delicious.Used smoked paprika & arboreo rice
Thanks, I think peas would go really well in it. I can't add chilli to some things as I cook for my mum and it upsets her stomach, but if doing this for myself I would've added a sachet of bombay biriyani sweet and sour mix, it's got these little dried sour plums in it. That and a teaspoon of Mr.Naga's chilli pickle. I also think this would be nice with an australian bush-taste.... I saw a dry rub in Tesco yesterday and it's got dark chocolate and myrtle leaves etc. Will buy some and let everyone know how it goes.
My son is 7 he loved this! May add some veg next time round. There was too much rice though, may have less next time! Needed extra spice for us adults, maybe cos we're asians :)
Thanks, most of it's gone now though, mum and I got through it quite well!
Yummy photo Great to see you're cooking something new and sharing the recipe real time - I love it - Carol
