Ingredients
- 500 grams Potatoes
- 120 grams Lancashire Cheese
- 2 medium Onions
- 40 grams beef dripping. lard or butter
- Β½ teaspoon salt
- ΒΌ teaspoon black pepper

Description
A superb traditional Lancashire dish of layered potato, onions, and cheese, slow-cooked in a pan until golden and crispy, which will gratify even the heartiest of appetites.
Method

Thinly slice the potatoes and onions and grate the cheese, melt the dripping in a large frying pan.
Remove the pan from the heat and place layers of sliced potatoes, onions and cheese, reserving a little of the cheese.
Cover and cook gently for about 30 to 40 minutes or until the potatoes and onions are cooked.
Pre-heat the grill five minutes before the end of the cooking time.
Sprinkle the reserved cheese over the top of the mixture, place under grill until the cheese is golden brown and bubbling.
Serve straight from the pan.

Pan Haggerty is from Lancashire no matter what those folks in Northumberland tell you and is a dish that can feed a hungry family very economically, which was why it was made-up in the first place. Pan Haggerty was and is a cheap way to fill stomachs, and a tasty one as well, and a dish that can be prepared on the most simple of cooking ranges.
The ingredients are potatoes and cheese, Lancashire, or if you must Cheshire, onions sliced a bit thicker than the potatoes, and plenty of seasoning, with some beef dripping or lard, or for the health conscious some oil. Use firm fleshed potatoes such as Desiree, or Maris Piper as they will keep their shape and not disintegrate into mash at the end of the cooking time.
