- 5 ozs sugar
- 5 ozs margarine
- 2 eggs
- 1 tablespoon lemon curd (good quality)
- Zest and ½ the juice of 1 Lemon

180C for 50 minutes
Grease and line a 2lb loaf tin, cream together marg and sugar, add the eggs one at a time, with a little of the flour, Add the rest of the flour and lemon curd,. Finally add the lemon juice and zest. Mix well and bake in oven 350F- 180C - Gas 4
