Preheat the oven or grill and cook the fish fingers following packet instructions.
Meanwhile, put the watercress in a food processor and whiz until very finely chopped. Add the mayonnaise and whiz again until it turns green.
Spread a slice of bread thickly with the watercress mayonnaise. Top with the hot fish fingers, then a layer of tomato slices and a few sprigs of watercress and finish with a slice of bread. Serve straight away with any remaining mayonnaise.
