- 1.3kg ripe full-flavoured tomatoes
- 1 tsp clear honey
- Dash of Tabasco sauce or squeeze of harissa
- 1 tbsp red wine vinegar
- 1 tbsp olive oil

Roughly chop tomatoes, place in a large pan and season. Cook gently over a low heat for 6-8 minutes, stirring occasionally, until the tomatoes have released their juices.
Tip into a food processor and process to a rough purรฉe. Transfer to a large sieve over a bowl and press as much tomato as possible through the sieve, discarding the solids.
Stir in 1 tsp clear honey, a dash of Tabasco or squeeze of harissa, 1 tbsp red wine vinegar and 1 tbsp olive oil. Chill well before serving.
