Description

"Chinese-style" roast loin of pork.

Method

    1. Pre-heat the oven to 200 degrees C and wash your loin of pork, then pat dry with kitchen towel (paper towels).

    2. Line a baking tray with foil and place your pork on it. Rub the meat all over with the Chinese Five Spice - don't rub the skin with it.

    3. Pour a little sunflower oil onto the skin and rub it in until the entire top is coated.

    4. Cover the skin with salt - literally cover with copious amounts until you can't see the skin, only the white salt. You can sprinkle a little coarse sea salt on top of this as well if you like. The salt will draw the moisture out of the skin to create great crackling and turn into a hard shell, which can be easily removed.

    5. Put your pork in the oven on the grill function for about 10 minutes, and then back to the normal oven function for about 30-40 minutes (fan-assisted oven). Remove the salt shell carefully and discard, and then put the pork back in the oven to cook until done.

    6. Carve and serve immediately with accompaniments of your choice!
