Take 3 ripe avocados and halve, stone and scoop the flesh into a bowl.
Go for the dimpled hass variety, if you can, as they have a wonderful buttery texture.
Roughly mash with a fork and stir in 1 deseeded and finely chopped fresh green chilli, 1 crushed garlic clove, ½ finely chopped red onion and the juice of 1 lime.
Keep tasting, seasoning and adding an extra squeeze of lime. Only stop when the flavours really jump out!
