- 8ozs Self-raising flour
- 4ozs Butter
- 4ozs Demerera Sugar
- 2ozs Sultanas
- 1 Egg (large)
- a pinch of salt

Rub the fat into the flour until it looks like coarse breadcrumbs. Add the demerara sugar, salt and the sultanas. Break the egg into the mixture and mix together with a knife.
It will seem that there is not enough liquid to bind all the dry ingredients together, but if you then continue to bring it all together with your fingers, it will cohere.
Place in rough heaps on a greased baking tray (about 12-14) and then sprinkle the tops with more demerera sugar.
Bake in an oven set at 200C for 15-20 mins.
Chef's Tips
For an even more delicious cake (and a surprise) use 4ozs of chocolate drops to replace the sulatanas.
