This is a delicious cake my grandmother made for Sunday tea

Method

    1. Preheat oven to 160c,300f,gas mk 2.

    2. Butter and line a 2lb loaf tin.

    3. Cut butter into bits and put into a saucepan with the honey and sugar. Melt over a low heat intil liquid. Boil for 1 minute. Leave to cool for at least 15 to 20 minutes.

    4. Beat the eggs into honey mixture.

    5. Sift flour into a large bowl and then add the liquid. Beat until it is a smooth batter.

    6. Pour mixture into the loaf tin and cook for approx 50 minute to 1 hour. Test with a skewer. Turn the cake onto a wire rack and glaze with approx 1 tablespoon of warmed honey.
