Alfie's Cupcakes

Light and fluffy cupcakes with yummy frosty icing, this cupcake recipe is so moorish - the cakes were all gone in one morning!

   Pre-heat the oven to 170C
   
   Put all the ingredients for the cake in the mixer and mix until smooth
   
   Spoon the mixture into 12 cupcake cases
   
   Put the mixture into the oven for 20 mins. You can test that they are cooked by sticking a knife into one of the cakes - if it comes out clean it is done!
   
   Leave to cool - meanwhile to make the icing mix the butter and gradually add the icing sugar and the vanilla essence.
   
   I used a piping bag and a rose nozzle to create the yummy swirly effect.
