Ingredients
- 1 package Plain Yogurt
- to taste Green onions
- to taste Salt & (white) pepper
- Cucumbers (best if seeds discarded and chopped. shredded or sliced as you prefer)
- Lemon juice or zest
- Orange zest or orange juice concentrate
- Black or green olives
- Garlic Γ’β¬β fresh or roasted
- Oregano. Basil or any other fresh herb
- Flavored oil

1. Place two layers of paper towels in bottom of pasta strainer.
2. Pour in yogurt and let stand for approximately one to one and a half hours. Time depend on how thick you wish final product to be.
3. Place strainer over large bowl or in sink to allow drippings to drip away
4. Chop green onions and optional ingredients to ΒΌ inch bites.
5. When yogurt is at a consistency that you like use rubber spatula to remove paper towels and pour into a clean bowl.
6. Add ingredients of choice to taste, with the required green onions and mix well.
7. Refrigerate and serve.
**Note: This recipe can easily be varied in size depending on the size of the yogurt container that you use. It is excellent with roasted potatoes, grilled meats or even select grilled/roasted vegetables (ie. zucchini, mushrooms, and green beans). I recommend just a simple chicken and potatoes meal with Tzatziki as the side dish to spice it up.
