Ingredients

8 Mini Pitta Breads
300g Red Onion Marmalade
1 x 227g Packet of Mattessons Smoked Pork Sausage, halved horizontally and sliced thinly
50g Feta Cheese
2 tbsp Freshly chopped parsley

This is a fabulous alternative for canape or a starter

Method

1. Toast the pittas for 30 seconds on each side under a hot grill. Cut each one in half and then open into a pocket and cut down each side to give 2 flat breads.
2. Spoon 1 tsp of red onion marmalade on to each piece of bread.
3. Top each one with 3 or 4 slices of Mattessons Smoked Sausage.
4. Crumble over 1 tsp of feta cheese and grill for 1 minute.
5. Sprinkle with freshly chopped parsley to serve.
